403 | Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2)) Observation: The air temperature of the line cooler recorded at 9 degree Celsius. Missing/wrong sized inserts in the top portion of the line cooler may be resulting in leakage of the cold air. The operator advises that the line cooler was serviced by a technician the previous day to address the same problem. Temperature logs not being maintained. Corrective Action: Adjust/Service the line cooler. It must be able to maintain 4 degree Celsius or lower temperature. Remove all potentially hazardous foods from the lower portion of the line cooler. Food in the upper portion must be used or discarded within 4 hours of bringing out of a working fridge. Time tracking required. Resume maintaining temperature logs. |
