Observation: Back door screen has a gap on the top to allow entry of flies into the premises. This door is currently being kept open because of operational issues.
Corrective Action: Recommend installing a new screen to make the premises fly proof.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: Walk in freezer and walk in cooler is need of cleaning. Shelves in the walk in cooler are dirty and greasy. Preparation cooler lid is broken.
Corrective Action: Increase the cleaning frequency on above said areas. Repair the lid on the preparation table.
117   Repeat Food Handler Training
Observation: Only two food handlers working on this facility have food safe training.
Corrective Action: To ensure that there is at least one food safe trained employee working at this facility more employees need to get food safe level 1 training.

Observation: Temperature records are not up to date.
Corrective Action: Maintain temperture records regularly as part of your food safety plan and documents all the variations from the limits and the corrective actions taken.

Comments:

All temperatures are meeting health requirements. Wiping clothes are properly stored in 200 ppm quartz solution
.All refrigeration and freezing units have thermometers installed in it and there is a digital probe thermometer available.
