108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Glasswasher in bar is not functioning adequately - sanitizing rinse cycle is not providing minimum 50ppm chlorine in rinse cycle. Operator not knowledgeable of correct procedures to operate glasswasher or how to test sanitizer concentration. (This violation has been cited on previous inspections dated October 19, 2005; December 28, 2005 and April 7, 2010). This is in violation of the BC Food Premises Regulation, Division 4, Section 17 (1) Every operator of food premises must ensure that the premises and the equipment and utensils used on the premises are maintained in a sanitary condition, and (2) Every operator of food premises must ensure that the equipment, utensils and food contact surfaces on the premises are washed and sanitized in a manner that removes contamination.
Corrective Action: Glasswasher must be repaired by January 16, 2012. As this is the 4th incident of same violation, a violation ticket of $230 will be issued. The glasswasher cannot be used until able to provide minimum 100ppm chlorine (or 12.5 iodine or 200ppm Quats) in sanitizing rinse. Operator cannot use glasswasher until written approval from EHO is given. Premise must serve beverages in original bottle, or in plastic disposable cups, until glasswasher has been repaired. Operator must be knowledgeable of correct operating procedures and sanitizer testing procedures for glasswasher.

Observation: Sanitation log for glasswasher has not been maintained (This violation has been cited on previous inspections dated October 19, 2005; October 14, 2008 and April 7, 2010).
Corrective Action: Test strips must be used daily to monitor glasswasher sanitizer concentration. Results must be recorded on Sanitation log daily. Sanitation log must be made available to EHO during inspections. Operator must be knowledgeable of correct sanitizer concentration testing procedures.
