Observation: Deep fried chicken stored at room temperature for more than 5 hours, internal temperature measured at 20 degrees Celsius.
Corrective Action: Chicken discarded - all potentially hazardous foods must be stored below 4 dgrees Celsius. Foods should be placed in shallow containers to facilitate rapid cooling; food should be cooled from 60 - 21 degrees Celsius within 2 hours and from 21- 4 degrees Celsius within 4 hours.
