Observation: Temperature logs are not up to date. No records being maintained for the hot holding unit.
Corrective Action: Keep temperature records up to date and include hot holding unit on your daily temperature recording.
510  Critical Hot holding equipment is able to maintain a temperature of 60 degrees C. or higher (Sec 19(1)(b))
Observation: Hot holding unit is not able to maintain >60 degree Celsius.
Corrective Action: Repair the hot holding unit so that it is able to maintain more than 60 degree Celsius temperature. Any food items in the danger temperature zone for up to 2 hrs must be reheated to 74 degree Celsius (any items stored in the danger temperature zone for more than 2 hrs must be discarded). The temperature of the hot holding unit turned up by the operator. Please note that if this hot holding unit fails to maintain 60 degree or above temperature, all the food items must be transferred to another hot holding unit.

Observation: The hand washing sink is being used as a prep sink. The operator advises that they have designated the two compartment sink near the dishwasher as a hand washing station. However, no paper towel available on this 2 compartment sink.
Corrective Action: Provide paper towel in a dispenser near hand washing sink.
