Observation: Sandwiches are being prepared downstairs; there is a handsink available and all dishes/utensils are being brought up to the coffee area for washing. Vegetables for the sandwiches (lettuce/tomato) are being washed in the handsink, there is no food prep sink available.
Corrective Action: A designated food prep sink is required to prevent possible contamination of the vegetables; alternatively, vegetables may be washed or sandwiches prepared in a different location.
116   Improper Construction / Maintenance of Establishment
Observation: There is a build-up of food spills in the milk cooler; grease/dirt around the seal of the freezer.
Corrective Action: Ensure that regular cleaning of all coolers and freezers is occurring as indicated in the sanitation plan.
