Observation: 1. Back rooms and hallway are full of excess clutter. 2. Floors and hard to reach areas need to be deep cleaned as there is excess filth build up.
Corrective Action: 1. Remove excess clutter and reorganize storage in back rooms and hallways so that all storage is six inches of the ground and rooms are clean, sanitary and well maintained. Excess clutter and not having storage at least six inches off the ground both contribute to filthy conditions that are unsanitary for food storage, preparation and service and are contributing factors to harborage by pests. Additionally having storage organized and at least six inches of the ground helps facilitate cleaning. 2. The floors and hard to reach areas must have filth cleaned up. Filth is a contributing factor to unsanitary conditions that are unsanitary for the food storage, preparation and service. Additionally, they contribute to conditions that are ideal for harborage by pests.
511   Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: One of the line coolers was not working at the time of the inspection.
Corrective Action: Working refrigeration equipment is needed to keep potentially hazardous food out of the temperature range that is ideal for growth of pathogenic microorganisms. At the time of the inspection all the potentially hazardous food had been removed from the unit and non potentially hazardous food was being stored on ice as a temporary solution. The technician was called to fix the unit.

Comments:

Hand washing basin was well equipped with soap and paper towel.
Quats was being used as sanitizer in three compartment sink dishwashing method and as a food contact surface sanitizer as per manufactures' specifications.
