108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Sanitizing rinse for dishwashing not at proper temperature (82ºC /180ºF).
Corrective Action: Dishwasher currently in facility is designed as a high temperature unit. High water temperature booster is not working. Operator was adding a hydrogen peroxide solution to rinse water. Hydrogen peroxide is not an approved sanitizer for dishwashing. Operator will attempt to repair high temp rinse cycle in dishwasher. Until high temperature cycle is repaired, dishes must be sanitized with a chlorine bleach solution (100ppm chlorine). Ensure dishes are washed, rinse, sanitized, air-dried. Do not rinse off sanitizer. Use bleach solution in final rinse in dishwasher, or spray bleach solution on washed dishes and air-dry. Instructions to prepare 100ppm chlorine sanitizing solution, left with operator. Please confirm with EHO method of dish sanitizing that will be used. Please provide this in writing in Sanitation Plan.
