Observation: Sanitizing rinse for dishwashing not at proper concentration for adequate time (Chlorine 100ppm)
Corrective Action: Repair dishwasher to provide 100ppm chlorine in sanitizing rinse. Provide test strips. Monitor sanitizer concentration daily. Record results on Sanitation log. Until dishwasher is repaired - operator will sanitize dishes in sink. Ensure detergent and sanitizer containers are connected to dishwasher. Ensure cleaning product containers are adequately labeled with contents.

Observation: A Food Safety Plan has not been completed and approved for this facility.
A Food Safety Plan is required under Section 23 of the Food Premises Regulation. The fine for failing to have written food handling procedures is $230.00.
Corrective Action: A Food Safety Plan must be submitted by May 26, 2010.

- Clean, wiping cloths stored in sanitizing solution (100ppm chlorine)
- Cooked rice and soup hot-held above 60C
- Foods in fridges are covered and dated.
- Raw meats stored on bottom shelves of fridge.
