404  Critical Hot potentially hazardous foods are stored or displayed above 60 degrees Celsius (Sec 14(2))
Observation: The hot holding equipment in the facility is broken.
Corrective Action: Repair this immediately. Until this equipment is fixed, as an interim measure - pizza can be held out for 2 hours immediately after cooking and must be refrigerated afterwards. Reinspection for correction of this item to be conducted next week.
705   Written actions to be followed up when critical limits are not met (Sec 23 (3)(d))
Observation: Records show that coolers are regularly measured above 4 degrees celsius and no corrective action is indicated.
Corrective Action: Ensure that these values are in fact accurate (at the time of inspection, the coolers appear to be functioning correctly) and if they are, ensure that they are properly repaired or replaced as necessary. Also, records indicate that hot holding temperatures are not meeting the critical limits of 60C / 140F. If items are not properly reheated to 74C or not properly hot held to 60C they should be either once again reheated to 74C or discarded. The temperature records should be reviewed by staff or management to ensure that safe temperatures are being maintained in this facility.
