Observation: Whole chickens cooled in the insert of the line cooler measured at 21 degrees Celsius after greater than 6 hours of cooling.
Corrective Action: Chickens discarded at time of inspection. Chickens must be cooled using a different method that achieves cooling from 60C to 20C in 2 hours and from 20C - 4C in an additional 4 hours. Methods that will increase the speed of cooling include - cutting the chickens up and spreading them out to increase the surface area, cool them on multiple shallow pans, and cooling them in the walk- in cooler as the compressor is more powerful. Indicate how this will be achieved from now on.

Observation: Some fruit flies noted.
Corrective Action: Consult professional pest control to come up with a schedule for treating drains in the kitchen and bar. Consider using fans to exclude flies from kitchen area and bar as well as plugging the drains at night. Enhanced cleaning in hard to reach areas (i.e. behind the bar) will aid in this regard. Reinspection to be completed to assess control measures.

Observation: There is space below the flooring and above the walk-in cooler that is collecting dirt and debris and cannot be accessed for cleaning.
Corrective Action: Either seal this area off completely so that it does not serve as an attractant for pests or as a source of contamination, or open it up so that it can be easily cleaned.

Observation: Bare wood surrounding the pop-syrup storage area is collecting dirt and debris.
Corrective Action: Refinish this area so that it is smooth, non-porous and easily cleanable (consider using a light-colored, durable high-gloss paint.

Observation: The area behind the bar is finished with bare wood that is porous and not cleanable.
Corrective Action: Finish the bare wood behind the bar with a smooth, non-porous, easily cleanable surface (for example a high-gloss bathroom paint or a durable wood stain).

Observation: There is a large hole in the floor of the bar area that is collecting debris, spills, etc and cannot be cleaned.
Corrective Action: Clean out all of this debris and seal this hole as soon as possible.

Comments:

Premises is otherwise well maintained. Other than item 105, all protective temperatures meet regulatory requirements at time of inspection. Dishwasher and bar glasswasher are functioning correctly at time of inspection. Temperature records are complete, up to date and accurate. Recycling area doors have been repaired downstairs and can be sealed tightly on both ends as requested on previous inspection report. This area is noted to have significantly improved in terms of pest control and general sanitation.
