General observations:
1. The dishwasher is sanitizing at >71 Degree Celsius rinse temperature as measured on the dishes.
2. The wiping clothes are being stored in an approved sanitizer solution.
3. Quat concentration out of the sanitizer dispenser is >200 ppm.
4. All the temperatures are meeting health requirements. Temperature logs are being maintained.
5. Discussed the current chemical storage practices with the operator. The operator to relocate the chemical bottles to the bottom shelf.
6. Generally a well maintained and clean facility.
