Observation: 1. Temperature guage on dishwasher is not working. 2. Light covers missing in food prep area.
Corrective Action: 1. Please inform this office once dishwasher guage is replaced. It is important to monitor water temperature of dishwasher sanitizing rinse on a daily basis. 2. Please provide shatterproof light covers for ceiling lights in food prep areas.

108. Dishwasher high-temperature sanitizing rinse recorded 77C at plate level = good.
113. All handwash stations supplied with liquid handsoap and paper towels.
116. Ventilation hoods above cooking equipment have been thoroughly cleaned and degreased.

Other areas noted at time of inspection:

- Clean wiping cloths stored in sanitizing solution = good.
- Refrigeration temperatures recorded 4C = good.
- Freezer temperatures recorded -23C = good.
- Fridges well organized, products labelled and covered.
- Facility clean and well organized.
- Reminder - do not allow hoses from sink taps to stand inside sinks full of water, to prevent possibility of cross-contamination of potable water system - consider installing backflow preventers on sinks taps.
