Observation: The condensate in the walk in cooler is being drained into a bucket sitting on the food storage shelf.
Corrective Action: The condensate drainage pipe should be repaired to make the condensate drain away into the sewer drain. In the meantime, the collecting bucket must be kept on the floor and away from food to avoid any accidental contamination of food. Target completion date for drain repair 2 months from the date of this inspection.

Observation: The pizza hot holding unit door does not close properly.
Corrective Action: The pizza hot holding must be repaired. Target completion date 1 month from the date of this inspection.

Comments:

In compliance items:
1. Walk in cooler and line cooler temperatures below 4 Degree Celsius.
2. Pizza hot holding temperature above 60 Degree Celsius.
3. Freezer temperature below -18 Degree Celsius.
4. As per information provided by the operator, all the utensils are washed, rinsed and sanitized in the three compartment sink. Chlorine test papers available.
5. Quat (200 ppm) available in the spray bottles.
6. Soap and paper towel available on the hand washing station.
7. Soap and paper towel available in the employee washroom.
8. Foodsafe certified food handler available.
9. No concerns identified with the food handling practices


One of the line cooler is not working but not being used at the time of this inspection.
