Violations:
A summary of the violations found during the inspection are listed below.

507   Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: Since the last inspection, operator has not implemented proper sanitizing procedure for bake ware. The two compartment sink is not being used to soak pots, pans and cooking utensils in 100ppm bleach as discussed during last visit. Dishwasher continues to be used despite not reaching adequate sanitizing rinse temperature.
Corrective Action: Operator was warned that failure to properly wash and sanitize equipment and utensils will result in ticketing ($230.00). The high temp dishwasher is scheduled for repair this Monday. Until then, ensure that all cookware, utensils etc. are washed and sanitized as discussed during today's visit. A sanitizing rinse sink was set up during today's visit with adequate concentration of bleach tested using test strips.

Comments:

Please prepare a written plan of the work that will be completed over the Easter long weekend and submit by Wednesday March 27th, 2013.

Outstanding items from March 15 routine inspection:
1. Repair dishwasher: scheduled for Monday 25th, follow-up scheduled for Tuesday March 26th at 10:30am.
2. Flooring: scheduled for Easter long weekend, follow-up scheduled for Tuesday April 2nd at 10am.
3. Light covers
4. Dishwashing area redesign
5. Relocate condensate drip tray on the back of the freezer
6. Reorganize chemical storage so items are not on the floor under dishwasher - install new shelving above that sink.
7. Pest proof back door.
8. Designated hand washing station for kitchen staff.

Items corrected from previous report:
1. Sandwich cooler and display cooler have been serviced and are now maintaining 4C. Service receipt from refrigeration company indicates that sandwich cooler will need to be replaced "very soon." Discussed with owner, who is currently pricing replacement units.
2. Proofer has been cleaned from top to bottom, floors re-surfaced and interior surfaces all painted. The type of paint used indicates that it will withstand relative humidity up to 85%. It is not certain at this time if it will withstand repeat exposure to the high humidity. Monitor the condition of the proofer and schedule maintenance regularly. If it can be maintained in its present condition all the time, a replacement will not be necessary at this time.
3.The back two compartment sink has been properly sealed to the wall with caulking.
4.All food items stored under the condensate drip tray on the back of the freezer have been moved.
