Observation: 1) Door seal at bottom of rear kitchen door requires some repair, to ensure no openings are visible, to allow possible entry of pests. 2) Several small holes or damaged drywall evident in rear kitchen area. 3) Some cracked or missing floor tiles are evident in rear kitchen area. 4) Backflow prevention devise is not evident on mop sink.
Corrective Action: 1) Repair door seal on rear outside kitchen door, to ensure a tight seal with no visible openings. 2) Repair any holes in walls or repair any damaged drywall. 3) Repair or replace any damaged or missing floor tiles. 4) If hose is attached to mop sink faucet, ensure an adequate backflow prevention is installed.

Comments:

The following items noted at time of inspection (in compliance with Regulations):
- Liquid handsoap and paper towel provided at handwash sinks
- Dishwasher provides 100ppm chlorine in sanitizing rinse
- Quats sanitizer used in spray bottles for wiping food contact surfaces (200ppm Quats)
- Fridge temp (walk-in cooler) below 4C
- Stand-up refrigerator temperature recorded 4C
- Temperature logs maintained daily
- Freezer temperature below -18C
- Cooked soups hot-holding above 65C
- Gelato bins cleaned and sanitized between uses.
- Soups re-heated on stove to boiling temperature, then transferred to hot-holding unit (as per food Safety Plan)
- Chemicals and cleaning products stored in designated cupboard with door
- Foodsafe certified staff on-site
