A summary of the violations found during the inspection are listed below.

108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: A sanitization step is not being used for dish and utensil washing.
Corrective Action: A sanitization step must now be used for all dishwashing. This can either be done with 100ppm chlorine or 200ppm quatz. Review proper dishwashing procedures with all staff that work in the Bear House.
109  Critical Repeat Other (Specify)
Observation: One of the coolers is missing a thermometer and temperature logs are not kept on site.
Corrective Action: A thermometer must now be purchased and temperature monitoring should occur at least 2x per day and recorded in a log book that is kept on site.
113   Improper Sanitary Facilities
Observation: There is no liquid soap dispenser or paper towel dispenser at the hand wash sink.
Corrective Action: Install a liquid soap and paper towel dispenser.
115   Repeat Inadequate Insect / Rodent Control
Observation: There are ants in the facility.
Corrective Action: Replacing the carpeted flooring should assist in mitigating the ant problem. As well, conduct an inspection at floor and wall junctions to ensure there are no cracks or holes where ants may find their way in.
116   Improper Construction / Maintenance of Establishment
Observation: One of the lights is missing a cover.
Corrective Action: A new light cover must now be installed.

Observation: The floors are carpeted and heavily soiled.
Corrective Action: It is now time to replace the flooring in this facility. Floor surfaces must be non-slip, smooth, impervious and easy to clean. Timeline for replacing the flooring is 3 months.

THIS INSPECTION REPORT PERTAINS STRICTLY TO THE BEAR HOUSE.

All temperatures met regulatory requirements at time of inspection.

When the installation of a new floor occurs, it would be good to replace the existing one compartment sink with a two compartment sink so that staff can more easily implement proper sanitization steps for dish and utensil washing.
