403  Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2))
Observation: Fruit filling for a cake was observed cooling at room temperature. The filling temperature was measured to be at 57 degrees Celsius by probe thermometer.
Corrective Action: The operator was advised to put the fruit filling the walk in cooler, in shallow pans, until it was intended to be used. This was to ensure that fruit filling was cooled from 60 degrees to 20 degrees Celsius in two hours and from 20 degrees to 4 degrees in four hours. If these limits are not met this could lead to the exponential growth of pathogens and the production of there toxins in the food. The operator agreed to follow this practice with any potentially hazardous food from now on.

Comments:

Handwashing basin was well stocked with soap and paper towel.
Temperature logs are well maintained and up to date.
General cleanliness and sanitation of facility is good.
Dishwasher is sanitizing properly, > 71 degrees at the dish.
