No violations were found during the inspection

Comments:

The following items from the previous report have been corrected:

1. Item: The line cooler next to the kitchen hand sink is running slightly warm at the time of inspection.
Correction: The cooler was found to have a problem with ice build-up that was preventing proper air flow, the cooler has been completely thawed and functions correctly at time of inspection. Operator indicated that a part is required to prevent further icing up of the cooler. Ensure that the cooler is regularly thawed out until the part has been replaced.

2. Item: Enhanced cleaning is required in the dry storage area above the walk in cooler next to the pop syrup
storage.
Correction: The cleaning has been completed.

3. Item: Boxes of tortilla chips are stored in the garbage room.
Correction: A cabinet has been provided for this food storage. Further work is still required on the cabinet ensure that the cabinet is properly finished to make it cleanable and make sure that the doors can be closed completely with no gaps to ensure that it is pest proof.

4. Item: The hand sink in the server station is broken, there is a problem with the drain.
Correction: The server station hand sink drain has been repaired so that it drains when washing hands. Some further clearing of the drain may be required but it is acceptable for use.

5. Item: The dishwasher sanitizing rinse took a long time before proper temperatures were reached. The rinse
thermometer is still broken (second request).
Correction: The rinse thermometer has been repaired (thank you) and the rinse cycle reaches proper temperature - further work is still scheduled to ensure that the rinse temperature can be reached quicker. R-inspection to be conducted after the spring shutdown - May, 2014.


Items not yet addressed will be assessed during the next follow up inspection after the spring shutdown - specifically

#1 Provide a new ice machine for the kitchen.

#2 Provide door sweeps to the 2 metal doors to this room so that it is sealed off from pests - the
sweeps should ensure that there is no space greater than the size of a dime under the doorway.
