Observation: Chicken schnitzels are currently being fried in this facility.
Corrective Action: Grease laden vapors are not permitted in this facility due to lack of type 1 ventilation hood.Please discontinue frying or provide a type 1 ventilation hood or a self contained fryer. A meeting requested with the operator to discuss this issue.

Observation: Observed frozen chicken being thawed at the room temperature .
Corrective Action: Thawing must be done under refrigeration temperatures, under cold running water or in microwave.

Observation: Sprouts and fresh cut vegetables are being stored at the room temperature. No time control in place.
Corrective Action: Do not store alfa alfa sprouts at the room temperature. Fresh cut vegetables must also either be stored under refrigeration or a 2 hour time control be implemented.

Observation: One of the line coolers is running warmer than 5 degree Celsius. The line cooler appears to be overloaded with food, potentially affecting the air circulation inside. Temperature logs are not up to date.
Corrective Action: Refrigeration temperatures must be maintained at 4 degree Celsius or below. Monitor and and record the temperature of this line cooler more frequently. Recommend removing some food items from this cooler to improve air circulation. Should this cooler fails to maintain less than 5 degree Celsius temperature in next 2 hours, all the potentially hazardous items must be removed from the cooler and the cooler be repaired.

Comments:

In compliance items:
- Soap and paper towel available on the 3 compartment sink.
- Refrigeration temperatures in fridges in the basement,and the display cooler in the front are below 5 degree Celsius.
- Freezer temperatures are below -18 degree Celsius.
- Wiping clothes being stored in the bleach sanitizer. Quat sanitizer available in a spray bottle.
- Food safe level 1 certified food handlers available.
- No signs of any pest infestation.
- Food handling practices appear to be satisfactory.
- Food storage practices appear to be satisfactory.
- Three step ware washing method is being used to wash and sanitize the utensils and food contact surfaces.

Chicken schnitzels and burger patties are being cooled down plastic containers. The cooling times are not being monitored. The operator to verify the cooling rates for these items using a probe type thermometer.

A meeting requested with the operator to discuss the ventilation and temperature control related violations.
