It is especially difficult to clean around and behind the area where pizza boxes are stored since they sit directly on pallets on the floor. Corrective Action: Shelving is required in this area that allows for boxes to be stored a minimum of 6 inches off the floor and which allows easy access for staff to clean behind and along baseboards. Recommend a movable metal rack on wheels. |
Comments:
General Observations:
1. All temperatures met regulatory requirements.
2. Quat sanitizing solution for food contact surfaces and dishwashing tested 200ppm.
3. Food storage acceptable.
4. Temperature logs were partially filled out for last month. New logs for December were not posted. This was corrected during inspection. Ensure that logs are filled out every day.
Request for Documentation:
During the last inspection, a request for documentation was made regarding the storage policy of pizza sauce. This document was never received. Documentation must now be supplied to the health department indicating the acceptable storage temperature for sauce once packaging is opened.
