Observation: Butter stored in the ice bath measured 15C.
Corrective Action: Store all potentially hazardous foods below 4C or discard and replace with fresh every 2 hours. When questioned about food rotation, staff indicated that they replace the ice every 90 minutes. Clarification is required for all staff that it is the food item, not the ice, must be discarded and replaced on a regular schedule of not longer than 2 hours.
113   Improper Sanitary Facilities
Observation: The plastic clip that holds the cover of the paper towel dispenser in place was broken.
Corrective Action: Repair.
116   Improper Construction / Maintenance of Establishment
Observation: The carpeted flooring behind the cappuccino bar is visibly soiled and cannot be easily cleaned.
Corrective Action: Remove carpeting and replace with a material that is smooth, non-porous and can be easily cleaned.

Items corrected from December 29, 2009 report:
1. Quat sanitizer tested 200ppm.

Outstanding items:
1. Butter stored at room temperature (see comments above).

General Observations:
1. All refrigeration temperatures met regulatory requirements.
2. Thermometers noted in all coolers.
3. Food handling observed during inspection - no concerns noted.
4. No signs of pests.
5. General sanitation acceptable.
6. Hand sink supplied with liquid soap and paper towel.
