Observation: Install plexiglass light diffuser. Some minor painting and caulking required as discussed (dishwasher area). Maintain log for refrigerator temps and dishwasher sanitizer as part of your sanitation plan.

Comments:

General sanitation, maintenance and food storage is good. As we discussed, the above-mentioned minor items remain for your attention and corrections.
