Corrective Action: 1.Within 1 month, thoroughly clean floors esp in corners, under equipment, and at wall joins in food prep area, sushi prep area, dishwashing area. If this violation is cited again, a fine will be charged.

Corrective Action: 1.Immediately clean and sanitize ice machine to protect ice from contamination.

Inspection 29/03/2006 at 17:50 during a very busy dinner.
Areas addressed from previous inspection 30/05/2005.
116.2.Cleanliness and organization in walk-in cooler is being maintained.

Other areas noted at time of inspection.
-wiping cloths in food prep area, cooking area, front service area stored in 100ppm chlorine solution and spray bottle with 100ppm chlorine used in sushi prep area with paper towels.
-all refrigeration <4C = good!
-all freezers <4C = good!
-final rinse of high temp dishwasher >72C internal with thermometer (gauges not checked for >82C) = good!
