Comments:

Kitchen is very clean and well maintained. The line inserts are not mechanically refrigerated, and therefore must be turned over every 2 hours. Mechanical refrigeration should be provided here to alleviate the significant time and effort that is need to time-control the inserts. Dishwasher not checked at the time of inspection. Dishwasher to be checked during the follow up inspection on January 21st, 2015. Hot holding and cooling temperatures were satisfactory at time of inspection.
