Corrective Action: Please ensure that all staff in the deli are aware that the dishwasher must reach 82 degrees Celsius at the manifold of the dishwasher for it to properly sanitize the dishes. Ensure that these temperatures are monitored and recorded daily. Also, ensure that temperatures in upper level of the Milk and Cheese display coolers are monitored closely to determine if the defrost cycle is raising the food (not air) temperature above 4 degrees Celsius (using a probe thermometer in water - or equivalent). Please have these records available for follow-up inspection. |
