Observation: Soups stored in cooler in large sealed containers at 40 degrees Celsius - proper cooling procedures were not followed prior to storage.
Corrective Action: Ensure proper cooling procedures are followed (60-20 degrees Celsius in 2 hours and 20-4 degrees in 4 hours).
105  Critical Repeat Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: Food in self-serve unit is not less than 4 degrees Celsius; lids were not on food upon arrival for inspection.
Corrective Action: Food must be maintained <4 degrees Celsius; lids must be kept on inserts during slow periods; ensure proper rotation of food.
110   Food Not Protected - General
Observation: Proper thawing procedures are not being followed - beef was left at room temperature to thaw.
Corrective Action: Food must be thawed under refrigeration temperatures or under cold running water.
116   Improper Construction / Maintenance of Establishment
Observation: Floor is beginning to show signs of wear and tear (cracks, uneven floor) and can no longer be adequately cleaned.
Corrective Action: Consideration should be given to replacing or resealing the floor in the kitchen area.
