110   Food Not Protected - General
Observation: Plastic drink containers were being stored in the ice behind the bar.
Corrective Action: Ensure that no drink containers are stored here. Ice is considered a food product and is not protected from contamination when it is used to store drink bottles.

Comments:

1. Glasswasher has been serviced by Ecolab and is achieving an adequate sanitization step.
2. Temperature logs are now up-to-date. The ambient temperature of the walk-in-cooler was slightly warm however the foods were at 4C. Monitor this unit closely to ensure that food temperatures do not exceed 4C.
3. The Food Safety Plan will be updated and forwarded to the Health Unit by Monday, July 27, 2009.
4. The stock labeling has improved and all foods are now stored 6 inches off the floor.
5. The hand sink behind the bar now has paper towel. Ensure it is also supplied with liquid soap at all times.
6. The fume hood has been cleaned. Ensure that next time it is professionally serviced, a date sticker is affixed to the unit.
7. The leak in the end cooler on the prep line has not yet been repaired. This will be completed by the end of next week.
8. The dish racks are now stored off the floor.
9. More sanitizer buckets are required in the kitchen area for storing wiping cloths.
