Comments:

Follow-up inspection conducted today. Items corrected from March 15, 2013 report:
1- The floor throughout the kitchen has been repainted.

Outstanding items:
1- All lights require shatterproof covers
2- Dishwashing area redesign: installation of 2 comp sink with spray wand, raise shelves for chemical storage, reposition dishwasher under counter, create space for receiving dirty dishes (plan to discontinue using counter across from large fridge for dirty dishes).
3- Swap freezer #9 and #10 so condensate drip tray is no longer positioned over food storage area.
4- Pest proof the back door
5- Install a designated hand sink for back of house staff.

Target completion date for all items: July 1, 2013.

The installation of a panini station was also discussed during today's visit. This would be located in the area presently being used for dirty dishes. Before a panini station will be approved, operator must submit written plans for plan approval (for redesign of dishwashing area and new proposed panini area).
