507 | Critical Repeat Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2)) Observation: Dishwasher is still not reaching 71 degree Celsius on the dishes. At the time of this inspection, the technician was working on the machine to diagnose the problem. Corrective Action: The operator must continue manually sanitizing the dishes after running through dishwashing machine until the final rinse temperatures of 82 degree Celsius minimum could be reached on the rinse gauge. A follow up inspection to be done on 7th November, 2014. Failure to repair the dishwasher may result in a $230 violation ticket. |
