Comments:
Follow-up phone call with the GM of the facility and the chemical supplier for the dishwasher.
Violations #108 noted on the previous report has been addressed - the dishwasher is a low temp dishwasher, however the bar manager present during the routine inspection was not aware of a sanitizer agent being used. The service technician indicated that an adequate amount of sanitizer would not have been measured as a bottle of domestic bleach was being used, this bleach has a lower percentage of chlorine than the commercial strength that the machine is calibrated for. Dishwasher has been serviced and the proper chlorine sanitizer is now being feed into the rinse cycle.
