Observation: Sandwich prep cooler measured at 6 degrees Celsius.
Corrective Action: Cooler temperature was adjusted at the time of inspection; now measuring < 4 degrees Celsius.
110   Food Not Protected - General
Observation: Food that is stored in the walk-in cooler and upright cooler is not covered.
Corrective Action: All food must be covered to prevent contamination.
114   Improper Garbage Storage And/Or Removal
Observation: Grease from fryers is left uncovered to cool; not disposed of daily.
Corrective Action: This grease may attract pests/rodents. Grease should be disposed of daily.

Comments:

Additional items noted:
- Maple cutting blocks are being scraped and sanitized regularly; however they are in need of resurfacing.
- Wiping clothes are being stored in a bleach solution when not in use - good.
- All raw food is stored below the salads in cooler - good.
- A sanitation plan/cleaning schedule is needed for this facility.
