Observation: A half water melon is being stored in the fridge which is not operational.
Corrective Action: Please be advised that the fresh cut vegetables and fruits are potentially hazardous foods and must be refrigerated.

Comments:

General observations/discussion:
1. All the temperatures are meeting health requirements. The temperature records are being maintained for all the freezing and refrigeration equipment.
2. One of the fridge in the bar area is not working. The operator is reminded to ensure that no potentially hazardous items are stored in it.
3. The dishwasher is sanitizing at > 71 Degree Celsius at the dishes.
4. The glass washer is sanitizing at >12.5 ppm iodine.
5. Discussed the storage procedures for the herbs in oil. It was understood that herbs in oil is a potentially hazardous food and must not be stored at the room temperature.

Following items from the last inspection has been corrected:

1. The tiles in the walk in cooler downstairs has been replaced.
2. Food safety plan being followed for the Hollandaise sauce.
3. Paper towels are available at the front bar hand sink.
