A summary of the violations found during the inspection are listed below.

108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Soap and bleach mixed together in the sanitizing bucket and used to sanitize the food contact surfaces.
Corrective Action: Do not mix the bleach and detergent in the sanitizing bucket. All the food surfaces first be washed, rinsed and then sanitized. This violation corrected at the time of this inspection.
110   Food Not Protected - General
Observation: A lot of items not related to the operation are being stored in the facility.
Corrective Action: All the items not related to the food facility operation must be removed from the premises. Target completion date 21 May, 2011.
113   Improper Sanitary Facilities
Observation: At the time of this inspection the operator was doing food preparation in the back room where there is no hand washing available.
Corrective Action: The operator must stop directly handling/preparing any food items in the back room, or provide a hard plumbed hand washing station with hot and cold running water. The operator to post a sign prohibiting any such food handling in the back room.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: The floor tiles in the kitchen in need of repair/replacement.
Corrective Action: The floor must be repaired to make it easily cleanable. This violation has been outstanding since last 2 inspections. Target completion date to correct this violation has been extended to August 30, 2011.

Observation: All the freezers have ice build up in them. One of the chest freezer lid is broken.
Corrective Action: Defrost and clean the ice build up freezers and investigate the reason for excessive ice build-up in the freezers and perform the necessary corrective repairs. The broken lid on the chest freezer should be replaced/repaired.

Observation: The facility can benefit from the additional cleaning on the inside of the refrigeration units. The shelves on the upright fridge are rusted.
Corrective Action: Please increase the cleaning/sanitizing frequency inside the fridges. Replace or refinish the wire shelves in the upright fridges to make then easily cleanable.

Observation: The door flap underneath the back door has worn out.
Corrective Action: The door flap on the back door must be replaced to make it rodent/pest proof.

Comments:

The following items from the last inspection report has been corrected:
1. As per the information provided by the operator, the operator continue to cool down advanced prepared gravies in the ice bath before shifting into the refrigerator. A food thermometer is available to verify the cooling rates.
2. As per discussion with the operator, the inserts on the ice packs in the prep cooler are only used during the lunch period and any potentially hazardous items are not stored on the ice baths for more than 2 hours. The operator to ensure that the food stored on the ice packs is discarded within 2 hours.

General observations/recommendations:
1. All the temperatures are meeting health requirements.
2. The dishwasher is sanitizing at more than 50 ppm chlorine concentration.
3. The hand washing stations are equipped with the soap and paper towel.
4. Recommend maintaining daily temperature logs.
