Comments:

The cooler under the prep counter and the stand up cooler next to the grill are running at acceptable temperatures. The stand up cooler next to the hand sink is still not circulating cold air to bottom shelves effectively. Replace the seals for this fridge, keep it minimally stocked to ensure cold air can circulate well and continue to monitor the temperature at the bottom. Temperature logs are up-to-date. A sanitizer bucket is being used to store wiping cloths in the kitchen - measured at 200ppm quatz. The light cover in the kitchen was replaced and the dishwasher racks were off the floor. All foods in the coolers were labeled and dated. The food safety and sanitation plans were reviewed and accepted.
