105  Critical Repeat Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: The front display cooler's food was measured at 12.4C. Low hazard foods were moved out and high hazard foods were discarded.
Corrective Action: Do not use this cooler until it can be serviced and is capable of maintaining all potentially hazardous foods at or below 4C. If it cannot be repaired, it will have to be replaced.

Comments:

The large stand-up cooler has been cleaned and the racks have been re-painted.
The freezer has been defrosted.
All meat products are now safety stored in a manner that will prevent cross-contamination.
Quatz sanitizer is now used to store all wiping cloths and was measured at 200ppm - good.

A follow-up inspection will be required to assess the status of the front display cooler once it has been serviced.
