110   Repeat Food Not Protected - General
Observation: 1. Containers of food in walk-in cooler observed uncovered. 2. Raw chicken observed stored above produce. 3. Some foods observed stored on floor (bags of flours, potatoes, onions) 4. Open packages of dry-goods in storage room observed spilled onto shelving. 5. Clean, wiping cloths stored in soapy water - with no disinfectant residual.
Corrective Action: 1. Keep all foods in walk-in cooler covered, to protect from contamination. 2. Keep raw meat on bottom shelves in walk-in cooler. Organize walk-in cooler 3. All foods must be stored a minimum of 6 inches up off floor. 4. Store open packages of dry-goods in food-grade containers with tight-fitting lids. 5. Clean, wiping cloth must be stored in sanitizing solution (100ppm bleach) or tsp bleach to litre warm water.
116   Improper Construction / Maintenance of Establishment
Observation: 1. Dishwasher spray arm is leaking 2. Excessive clutter in kitchen (cardboard, unused equipment, dirty equipment below dishwasher, etc) 3. Paper towel dispenser at handwash basin empty at time of inspection 4. Area below dishwashing area wet and unclean. 5. Dirty mop water is currently being emptied into dishwashing sink.
Corrective Action: 1. Repair any leaks from dishwasher 2. Remove any items and equipment from kitchen that are not used. Maintain kitchen in clean and orderly manner. 3. Refill paper towel dispenser 4. Keep floors dry and clean. Use de-greasing products for floors, walls and equipment cleaning. 5. Empty dirty mop water in janitorial sink or into toilet.
