507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: Mechanical glass washer is not providing adequate concentration of sanitizer in the rinse water. Iodine concentration measure approximately 4 ppm.
Corrective Action: Calibrate the glass washer to provide minimum 12.5 ppm iodine in the rinse water. This is a critical violation and must be corrected immediately.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: Single use paper towels not available on the hand washing station.
Corrective Action: Provide single use paper towels on the hand sink.
