Observation: Hamburgers held at room temperature on the edge of the grill (27 degrees Celsius) for indeterminate amount of time - discarded.
Corrective Action: Ensure potentially hazardous food are hot-held > 60 degrees Celsius or held < 4 degrees.

Observation: Blanched potatoes stored at room temperature - returned to cooler.
Corrective Action: Cooked (blanched) potatoes must be kept under temperature control (< 4 or > 60 degrees Celsius) - only keep out enough for the current service period, monitor time spent at room temperature.

Observation: There was no soap or paper towel available at the handsink in the dishwashing area; buckets and mops are stacked in front of the sink.
Corrective Action: Ensure the handsink is properly stocked (soap and paper towel) and accessible at all times.

Observation: There is a build-up of food debris under the large cooler (downstairs).
Corrective Action: Ensure regular cleaning of all hard-to-reach areas.
