Observation: 1. The line cooler has not yet been repaired. At the time of this inspection this cooler was running at 8 Degree Celsius. 2. A system to ensure 2 hr time control for the cut vegetables and sprouts being stored at the room temperature has not yet been developed.
Corrective Action: Please ensure that no potentially hazardous food is stored in the line cooler until the cooler is repaired. The line cooler insert can only be used if 2 hr time control is used. 2. A plan to ensure 2 hr time control must be developed and used for the fresh cut vegetables and sprouts being stored at the room temperature. Please be advised that failure to come up with a plan will necessitate the relocation of all these items into the line cooler.

Comments:

The following items from Aug 12, 2010 inspection report has been addressed:
1. A probe thermometer has been provided.
2. The temperature logs are being maintained.
3.The cheese fridge has been emptied but has not yet been repaired.

The following items has not yet been addressed:

1. At the time of this inspection the line cooler was running at 8 Degree Celsius and was still being used to store some potentially hazardous items. Please be advised that this line cooler must not be used to store any item until it is fixed. Relocate all the items to an alternate refrigeration unit.
2. The lack of formal 2 hour time control for the fresh cut vegetables and sprouts remains a concern even if these items are being used up quickly.
3. The cooling rates for the advance prepared items has not been verified yet.
