Observation: Food temperature in the preparation table inserts was measured at 10 degree Celsius. Temperature inside the preparation table cooler is 4 degree Celsius.
Corrective Action: This table should be able to maintain a temperature of less than 4 degree Celsius in the prep table inserts. Get this condition fixed as soon as possible. In the mean time refill the inserts with the small amount of food to ensure that the food is not above 4 degree Celsius for more than 2 hrs. Using metallic inserts instead of plastic may take care of this problem.

Observation: Lack of clear instructions on how to make a sanitizer solution. Lack of sanitizer concentration measuring strips. Freezer has a thick ice build up. Temperature records show that this freezer is not able to maintain less than 18 degree Celsius temperature.
Corrective Action: Please ensure that your sanitation plan has clear instructions on the amount of sanitizer to be used. Display signs by the sink . Provide the test strips to measure quartz sanitizer concentration. Defrost the freezer to make sure it is working efficiently.

Comments:

Walk in cooler temperatures are satisfactory. Temperature logs are being maintained. Generally it is a clean establishment. Hand washing stations are equipped with the soap and paper towels.
