Observation: Drink bottles observed being stored inside the ice sink. Reoccurring critical violation.
Corrective Action: Violation corrected at the time of this inspection.

Observation: The location of the mop bucket has yet not been changed. It is still being stored in front of the ice machine.
Corrective Action: The location of mop bucket changed at the time of this inspection. As per the restaurant manager, the bucket will now be stored away from the ice machine.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The dishwasher has yet not been repaired to provide 71 degree Celsius final rinse temperature on the dishes. At the time of this inspection, the technician was working on repairing the dishwasher.
Corrective Action: Dishwasher must provide minimum 71 degree Celsius on the dishes. ( 81 degree Celsius on the rinse temperature gauge). Manually sanitize the dishes until the dishwasher is repaired.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The rinse temperature gauge on the machine is not accurate.
Corrective Action: An accurate wash and rinse temperature gauge must be provided on the dishwashing machine.
511  Critical Cold holding equipment is able to maintain a temperature of 4 degrees C. or lower (Sec 19(1)(b))
Observation: The line cooler was running at 8 degree Celsius at the time of this inspection.
Corrective Action: As per information provided by the manager, she has placed a work order for the line cooler and the refrigeration technician will start repairing the cooler on 18th Feb. The manager advised to not to store any items in this line cooler for more than 2 hours.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: Soap and paper towel has not yet been provided on the bar sink.
Corrective Action: Please provide soap and paper towel on the bar sink.

Comments:

Discussed the results of this inspection this Tia Stonier, the restaurant manager. Tia informed the EHO that she was not able to follow up on the items on the Feb 12 inspection report because she was waiting for a written report.

The EHO provided a hard copy of the Feb 12 report to the manager and provided a verbal explanation for all the violation and the required corrective actions.
A follow up inspection required.
