Monitor temperature of unit daily with thermometer located near food; reach-in cooler with prepackaged hamburgers and subs up to 57 degrees F.; cooler very cramped, items held above 40 deg. overnight, discard; Display cooler with sushi and ready to eat high hazard foods too warm throughout; top 2 shelves of cooler containing prepacked sliced meat produtcts also too warm.

Observation: wooden cutting board in deli should not be used for ready-to-eat food contact products, nonabsorbent food contact surfaces are required. Ensure all cooling units are equipped with thermometers located where they are visible and near the food.

Hot holding temps in deli are mostly satisfactory, all deli cooler temps are satisfactory.
