Observation: Temperature logs are not being maintained.
Corrective Action: Temperature logs must be maintained for all refrigeration, hot holding equipment and the dishwasher rinse temperatures.

Comments:

Following items have been corrected from the last inspection report:
1. The eggs are being stored correctly in the fridge.
2. 100 ppm bleach solution is available at a convenient location to store wiping clothes. Please ensure that this solution is being used to store the wiping clothes.
3. The ice scoop is being stored out of the ice, but it is hanging in front of the fridge where it is still subject to contamination. The scoop must be stored out of ice and where it is protected from contamination.
