A summary of the violations found during the inspection are listed below.

Observation: 1. Floors in kitchen and walk-in cooler are worn and showing bare concrete in some areas. 2. Wall (drywall) behind and beside dishwasher is worn and damaged.
Corrective Action: 1. Floors in kitchen and walk-in cooler need to be resurfaced, to provide a floor surface that is smooth, non-absorbent, durable, non-slip and easy-to-clean. No bare concrete. 2. Install a waterproof backsplash behind and beside dishwasher.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: 1. Visible build-up of grease and food debris observed under and behind cooking equipment. Ceiling vent covers showing grease and dust build-up. 2. Broken handle on walk-in cooler is repaired with duct tape. Tape is worn and dirty. 3. Some boxes or containers of food and some kitchen equipment observed stored on the floor or on plastic crates or pallets. 4. Several open packages of dry-goods were observed stored in dry storage areas.
Corrective Action: 1. A regular cleaning schedule is required for all areas of kitchen, especially in hard-to-reach areas. Thorough cleaning is required to remove grease and food debris from under and behind all kitchen equipment. Ceiling vent covers require cleaning. 2. Repair walk-in cooler handle. Remove duct tape. 3. All food and kitchen equipment must be stored on shelving, a minimum of 6 inches up off floor - to facilitate easy cleaning of floors under and behind all shelving units and equipment (especially in walk-in cooler). 4. Open packages of dry-goods should be transferred to food-grade containers with tight-fitting lids, to prevent potential pest infestations.

Observation: Screen door at rear of kitchen has tear in screen and does not fit tightly when closed.
Corrective Action: Repair any tears/holes in screen door. Provide a seal strip along bottom of screen door, to ensure door provides a tight seal when closed, to prevent the entry of any pests.

Comments:

The following items noted (in compliance with Regulations):
- Liquid handsoap and paper towels provided at handwash sinks.
- Fridge temperatures recorded 4C
- Freezer temperature recorded -20C
- Temperature logs maintained daily
- Dishwasher sanitizing rinse recorded sanitizing rinse water temperature above 180F
- Quats sanitizer in spray bottles provided for sanitizing kitchen surfaces.
- Foodsafe certified staff on-site.

Follow-up inspection will be conducted on June 15th, 2012.
