Comments:

Several of the outstanding items from past inspection reports have been corrected.
Outstanding items:
1. Light needs to be replaced in janitorial closet.
2. More permanent solution for cooler under salamander.

In compliance items noted during today's visit:
All cooler temperatures met regulatory requirements.
Dishwasher final rinse temperature tested >71C.
Bar glasswasher tested >12.5ppm iodine.
Thermometers noted in coolers.
No issues noted with storage or labeling of potentially hazardous foods.
Some vegetables were noted in the loading area in boxes - if that is their permanent storage location (e.g. apples) then they should be in sealed containers, not open boxes.
Sanitizing solutions tested 200ppm quat.
Facility has active pest control program in place.
General sanitation was good.
Handwashing facilities stocked and accessible.

Recommendations:
1. Existing cooler configuration in kitchen prevents convenient use of lids over inserts (cooler under the beam and under salamander). Various options were discussed during today's visit. Implementation of the most suitable options will ensure that food temperatures meet regulatory requirements even during the peak service times. It is understood that the milk crates being used to facilitate the makeshift heat shield under the salamander will be replaced with a more permanent and effective solution (or different style cooler). All foods must be stored at 4C under mechanical refrigeration.

2. The wooden pos stations behind the bar are in a deteriorated state and will need to be replaced in the future with more durable shelves that can be easily cleaned.
