A summary of the violations found during the inspection are listed below.

402   Food is protected from contamination (Sec 12(b))
Observation: Open/uncovered containers of food were observed in the walk-in cooler. Some inserts of food were also double stacked and others were stored directly on the floor.
Corrective Action: Ensure all food containers are covered and stored at least 6 inches off the floor on shelving.
503   Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: The backflow prevention device in the janitorial closet is overdue for testing.
Corrective Action: Have the unit tested annually by a qualified person.

Comments:

A routine inspection was completed; the following items are in compliance:
- All refrigeration and freezer temperatures met regulatory requirements.
- Thermometers noted in all refrigeration units.
- Hot holding foods measured >60C.
- Temperature logs are maintained on a regular schedule.
- Sanitizing solution used to store wiping cloths measured 200ppm quaternary ammonium.
- Dishwasher's final rinse measured 50ppm chlorine.
- Foodsafe trained staff on site at time of inspection.
- Food handling was observed during inspection - no concerns noted.
- No signs of pest activity were noted.
- Premises sanitation is acceptable.
- Ventilation system cleaning is up-to-date - next service is due November 2014.
- Hand washing station equipped with soap and paper towel.
- Washrooms are clean and supplied.
- Permit is posted in a visible location - annual permit fees are paid.

Operator was asked to provide an up-to-date Food Safety Plan and Sanitation Plan during inspection. These documents were sent to district health officer immediately following inspection. Ensure a copy of these documents is kept on site for reference and training purposes.
