Initial inspection of facility following equipment upgrades to the kitchen:
- All coolers are maintaining temperature < 4 degrees Celsius - good.
- The food safety and sanitation plans have been updated to reflect the renovations - good.
- Prior to opening, ensure all counters are cleaned and sanitized and a thorough cleaning occurs under all equipment and counters.

To be completed by Jan. 30/07:
- Stainless kick-plates must be installed.
- Raw wood surfaces must be covered with stainless or painted to ensure a cleanable surface.
