The thermometer in this display cooler is not accurate. Corrective Action: Please repair the display cooler to enable it to maintain less than 4 Degree Celsius temperature. An accurate thermometer must be provided in the display cooler. All the potentially hazardous items from this cooler were transferred to another cooler at the time of this inspection. |
Comments:
General Observations:
1. The dishwasher is sanitizing at more than 71 Degree Celsius rinse temperature as measured on the dishes.
2. Temperature logs are being maintained but the problem with the display case could not be identified in time because of a malfunctioning thermometer in it. Recommend periodic calibration of thermometers to ensure their accuracy.
