Observation: Cleaning needs to be improved - food debris and clutter was noted under the front counters, behind garbage cans, behind panini grills, underneath hot holding units, under back sinks in kitchen and under kitchen equipment. Also in the 2 back closets where upright cooler and freezer are located.
Corrective Action: A re-inspection will be conducted in one week. Please ensure that a thorough cleaning is conducted prior to re-inspection.

Observation: Paint is wearing off on the walls in the kitchen in a number of areas.
Corrective Action: Affected areas will need to be re-painted.

Observation: The drawer under the espresso machine is not smooth or non-porous and cannot be easily cleaned.
Corrective Action: Drawer must be painted or otherwise sealed so it can be properly cleaned.

Observation: Paint on the shelves under the front counters has worn off in several areas, surfaces are not smooth, non-porous and cannot be easily cleaned.
Corrective Action: All affected surfaces need to be re-painted.

Observation: The floor coving around the front counter has come loose and is trapping food debris.
Corrective Action: All coving that is not properly sealed to the walls/counters must be repaired.

Observation: The floor drain in the kitchen has a recessed area around it that is trapping food debris and cannot be easily cleaned.
Corrective Action: This needs to be properly filled so it is flush with the surrounding floor and does not trap food debris.

Corrective Action: Submit payment for Permit fees.

Comments:

General Observations:
1. All refrigeration units met regulatory requirements (fridges <4C; freezer at -18C)
2. Hot holding units measured >60C.
3. All foods protected from contamination - covered and dated.
4. Dishwasher final rinse temperature tested >71C with thermo-label.
5. Sanitizing solution had adequate concentration.
6. Foodsafe-certified person on site.
7. No signs of pests during inspection.
8. Hand washing stations equipped with liquid soap and paper towel.
9. Temperature logs are up-to-date.
10. Thermometers present in all coolers.
